Working in the field means working in the front line, directly talking to customers, generating sales lead, provide customer feedback to corporate headquarter, etc. So the verb fielding means performing all these tasks and duties.

Simply put, it's just another word for working, or taking care of thing. So it's up to you on what "taking care of questions " means, it could mean just collecting the question, answering the question, or answer the question to the satisfaction of the customer.
